Topping
1 cup Gluten Free Flour
3/4 cup Organic Honey
1 stick unsalted butter
1 Lemon
2 to 3 cups organic steel cut oats
1/2 teaspoon nutmeg
1/2 teaspoon ground cinnamon
Filling
2 1/2 to 3 pounds apples 5 to 6 large apples preferably honey crisp
1 lemon
Honey
1 Aluminum baking pan
Nutmeg
Ground cinnamon
Prepare Filling
Peel, core, and slice apples into ¼” to 1/8” slices
Cover the bottom of the baking pan with a layer of apple slices
Drizzle honey onto the apples lightly coating the apples in the bottom of the pan
Next sprinkle a light dusting of cinnamon and nutmeg across the apples
Repeat this process with a layer of apples, honey, cinnamon, and nutmeg until the pan has been filled to about 1/4'” from the top.
Next slice the lemon in half and squeeze over the top of the apples.
Prepare Topping
Combine flour, cinnamon, nutmeg and oats then mix thoroughly
Next zest the lemon and squeeze the juice into the mixture above
Add honey and melted butter
Mix thoroughly
Spread the mixture over the filling making sure to cover the apples completely
Cover with foil
You can cook immediately or refrigerate, freeze, or place in cooler to cook the next day
Cooking
Preheat oven to 350
Cover with foil
Cook for 20 – 25 minutes
Remove foil cover and cook until topping is golden brown
This recipe can be served warm after the apple crisp has time to cool and the apples cook down a bit. You can also serve cold if properly refrigerated after cooking and can last several days as dessert or breakfast. This dish can be warmed up later on a griddle or in an oven on the river.
